BBQ Time - Grab your tongs & beers

Hey Guy's it's BBQ Time...grab your tongs and a beer. Amazing Techniques to get the most out of your BBQ

Barbecuing  has gone way beyond charred steaks and sausages - it has entered a whole new dimension.
Now, men are using their barbecues like we women use our stoves. Who would have ever thought the word versatile could be used to describe a barbecue? It's a rotisserie oven, a smoker, even a pizza oven!

 Of course the prerequisites are still needed; a pair of tongs, a can of beer at the ready fridge full of salads made by the other half.  But I am one of the lucky women - I have been privy to male 'insider knowledge'.  My brother-in-law Steve Walkley has kindly agreed to share his Amazing BBQ Techniques on this blog.

AMAZING TECHNIQUES:  PIZZA 'OVEN' 


Two brick floor tiles and Terracotta 36 mm round pots would turn into reusable barbecue pizza ovens...brilliant !!
Method: 
1. Heat terracotta pots and base tiles on high for at least 30 minutes
2. Carefully lift the pots up as they are super hot - Steve inserts a poker into the hole at the top to do this.
3. Turn heat down to low-medium - the residual heat from the hot pots cooks the pizzas. Place pizza on the brick base and cover with the pot.

4. Check the pizza base after about 10 minutes - lift a bit up to see that it's browning - not burning. Don't leave longer than 15 minutes!
2x pizzas at just Fifteen minutes - you can feed a party in no time!
Hmmm...oh wow, look at that pizza. Who doesn't love a home made pizza...and think of the money you can save doing it yourself!
Hungry teens having a party in the garage - no need to order out, just crank the bbq on high and rustle up some delicious pizzas - they will love you for it!Nothing soaks up booze like pizza! - economical and great for those bottomless teenage tummies.




AMAZING TECHNIQUES:   LARGE BBQ = LARGE SMOKER 

THIS LOOKS LIKE HAM...BUT IT ISN'T - IT IS PICKLED PORK !

IT TASTES LIKE HAM, IT CARVES LIKE HAM, IT'S SMOKING LIKE HAM, BUT IT COSTS 1/3 OF THE PRICE THAT HAM DOES! SERIOUSLY, COOKED LIKE THIS YOUR FAMILY AND GUESTS WON'T EVEN KNOW THEY AREN'T 'REAL HAM'. TRY IT, I GUARANTEE YOU THEY WILL LOVE IT!

OMG how good does that look..!!! And the smell....hmmm, you will have the neighbours salivating!  
Cooking time: approx 3 hours on 'cool'side of the barbecue, cover with hood. The smoker is on the hot side and the heat from the hood cooks without scorching. 
Glaze: Honey or my favourite Apricot Jam. Simply spoon some into a cup, heat in the microwave for about 10 -15 seconds - just long enough so it melts then you can baste it onto the pork. Basting several times throughout the cooking process will give you that delicious sticky sweet glaze that makes the meat taste so amazing.

Simple set up -
one wok, a hot plate, and smoking kit

Men - this is the easiest chance to impress that special someone in your life. Create a perfect romantic meal for two - don't forget the bubbly!
Salmon - Perfectly smoked with just a hot plate and a wok - Delicious!
How simple is that... You can do it too!

Method: 
1. Glaze salmon with Apricot jam - soften jam in microwave 10 seconds first.
2. Leave to smoke for 10 minutes - then enjoy!
